
Meet Chef Zach Sato
Introducing Chef Zach Sato of The Restaurant at Hotel Wailea, Hawaii's only Relais & Chateaux property. As Chef of this year's Diner en Blanc, we asked Zach for some inspiration on picnics and his thoughts behind the menus.
What is your favorite thing about a picnic?
Being able to relax without noise and pressure from the outside world. I like to go somewhere cool preferably up in the mountains close to the clouds.
If you needed to put together a picnic basket for two in under 30 minutes, what would it include?
Easy.. Quality wine, cheese, crackers and cured meat. Maybe some fruit in there....
What advice do you have for people putting together their own dinner?
I recommend taking the hassle off yourself and/or date and let us do the work for you.
What are some of your favorite dishes on this year's Diner en Blanc catering menus?
The gazpacho and potato salad with caviar. Gazpacho screams summer and I love the brininess from the caviar the cuts through density of potato.
Tell us what inspired you when consulting on this year's menus.
Offering very light fare. The event is meant for you to dine and have a great time. If the meal were too heavy it might leave your tummy a bit heavy not wanting to let yourself get up and dance!
Where can people experience your full menu?
On the island of Maui. We are located on the hills of Wailea, tucked away in our own oasis away from the busy big hotels. The hotel boasts couples only and allows no children as well. Perfect getaway for two.
